To tell you the truth I don't know exactly which counters I need. I'd need a way to check if the logs report some severe error and to receive a warning message.
For example: few days ago a customer called me because all their email accounts weren't receiving any email. Looking into the multipop log (his mdameon is configured in multipop mode) I found out that there were auth errors because his ISP had changed some security setting. In cases like this I'd like to receive immediatly some kind of notification.

I can't think of a performance counter that could be used to notify you about an error like that. The performance counters will show you the state of services such as PUP, SMTP, IMAP, ActiveSync. It will show you message counts are in each queue, active session counts, license status, software updates available, queues states, and some basic stats that are available in the MDaemon UI.
You can see all the counters available by starting Windows Performance Monitor, right click in the performance monitor, and select Add Counters. Then find and expand MDaemon in the list of counters.
In this case, the only thing I can think of would be a script that searched the multiPOP log for the error that was being received and when found could send you an email.
