From what I have read about Outlook’s AutoDiscover implementation it prioritizes IMAP and POP over ActiveSync. So if there is data in the AutoDiscover response about the IMAP and POP server, Outlook will always setup the IMAP or POP account.
Theoretically, we should be able to exclude POP and IMAP from the Autodiscover response and cause Outlook to setup an ActiveSync account, assuming Outlook requests the ActiveSync data from the AutoDiscover server. Unfortunately, at this time we have no way of excluding this data from the AutoDiscover response. We will look into making these changes for a future version.
There may be a way to tell Outlook to skip the AutoDiscover lookup for the standard POP, IMAP, and SMTP protocols so that it can continue one with the AutoDiscover process for ActiveSync, but if there is a way, I haven’t figured it out yet.

Was this ever resolved?
I have the same issue where I have SRV records set up correctly for AutoDiscover ActiveSync and I can manually set up Exchange ActiveSync in the latest Outlook on Windows but if I have Outlook use AutoDiscover it sets up IMAP instead of ActiveSync and this is in the log (IP and domain have been masked)...
(Also trying to use AutoDiscover with latest Outlook on Mac gives same log as below but will not auto setup anything and eventually returns an error in Outlook)
